This weeks cheese sample is the beautiful Valdeon (Picos Blue). A punchy blue made with a mix of cow and goats milk and wrapped in maple leaves. We are pairing this with Tofaa from Diggers Fine Cider – made locally in Perthshire. A delicious sparkling cider. The acidity cuts through the richness of the cheese and the bubbles cleanse the palate, ready for the next mouthful. It’s perfect
